Fail to do so, and you’ll probably end up buying the most expensive knife you can afford. And in the world of knives, expensive doesn’t necessarily mean exceptional.
What is a Chef’s Knife?
The chef’s knife is sometimes called the cook’s knife, or the French knife. It is used mainly for chopping food on a cutting board and its blade is designed so that you can use the least tiring cutting motion, which is rocking the blade from tip to heel with efficiency and ease.
The length of chef’s knives range from 6 inches to 14 inches – but generally, one with an 8-inch blade is most popular.
Originally, the chef’s knife was used by cooks to slice and disjoint huge pieces of beef. Today, you don’t need to have a hunk of cow to own a chef’s knife. For most western cooks, the chef knife acts as a general-utility knife to do everything from slicing and chopping to mincing and dicing meat, poultry and vegetables.

How to Choose a Chef’s Knife
We like what one of the editors of FineCooking.com said about choosing your first cook’s knife:

Nothing beats feeling how a knife feels in your hand before buying one. The Wüsthof Classic 8-inch chef’s knife may feel balanced and sturdy in your hand – but in mine, it might be a little too light for my liking.
So the lesson of the day is this: there is no one knife that’s right for everyone.
Here’s our suggestion: take a stroll to your neighborhood cookware and kitchen tool store and browse the aisles that offer chef’s knives. Test-drive a knife or two by holding it in your master hand.
- Does the handle fit your hand? It’s important to choose a knife that feels comfortable in your hand yet secure when you grip it
- Does it feel heavy? Does it feel too light? Some slice and chop with force – others may find heavier knives a little too fatiguing
- Does it feel balanced? When we talk about knives and balance, we’re talking about a knife that feels stable in your hand – not keeling forward toward the blade, or falling back into the handle
Are you a Rocker?
Like we mentioned earlier, the least tiring cutting motion involves rocking the blade from tip to heel.
So here’s a good point to mention that there two kinds of chef’s knives: the traditional chef’s knife, and the Santoku.
If you like rocking back and forth while chopping or slicing on a cutting board, you’ll probably stick to the traditional chef’s knife. If you like to slice-and-dice rapidly, the Santoku chef knife might be a better choice. These knives are generally lighter in weight and have a straighter edge, allowing your knife more contact with the cutting board.
